The search for the best Thanksgiving turkey is every cook’s quest. There’s nothing worse than inviting people over to your home and having the main attraction be dry and disappointing. I always think of that scene in National Lampoon’s Christmas Vacation, when Clark goes to cut the perfect-looking turkey and it turns into dust. The rest of the dinner is spent awkwardly trying to eat the bird, each family member making aggressively uncomfortable chewing noises. Don’t let that happen to you in the coming weeks.

This turkey recipe is not complicated or particularly special in any way. You start the oven off at 500°F, and while it’s warming up you pat the bird dry and rub on some butter and seasoning. Then, you cut up a bunch of vegetables and add it to the bottom of the roasting pan along with some water. Put the turkey into the oven for 20 minutes until it begins to brown, and then reduce the temperature to 350°F until the turkey is cooked through (the meat should be at least 165°F).
