When we think about food on St. Patrick’s Day, we automatically think of colcannon or corned beef and cabbage (aka dinner). But what if you want to kick things off in the morning with a fun, celebratory breakfast? That’s what this cereal milk chia pudding is here for.

This is the kind of breakfast you need to assemble the night before — so prepare accordingly.

First you make the cereal milk, which will serve as the base of your chia pudding, by combining milk and Lucky Charms in a bowl and letting the flavors steep for 45 minutes. Once you’ve strained the cereal out, you stir chia seeds, vanilla, honey, and salt into the milk.

After a stint in the fridge overnight, you’re ready to assemble your chia pudding bowl! Chia pudding has a very unique, soft texture that can be off-putting at times, but this particular bowl is garnished with Lucky Charms, which provide a nice, crunchy contrast.
