What’s the perfect summer dinner? Bite-sized pieces of herby yogurt-marinated chicken threaded onto skewers, then grilled to perfection.
garlic
lemon zest and juice
vegetable oil
chicken breast or thighs
red pepper flakes (optional)
paprika
salt
yogurt
parsley
Prepare the yogurt marinade by adding all of the ingredients (minus the chicken) into a Ziploc bag. Seal the bag and massage to combine.
Cut the chicken into 1-inch pieces.
Add chicken to the yogurt marinade. Seal the bag, then massage to coat. Set aside at room temperature for 30 minutes or refrigerate up to overnight.
Thread the chicken onto skewers, 6 to 8 pieces per skewer, leaving 1/4 to 1/2-inch space between pieces.
Heat the grill to medium-high and oil the grates. Grill the skewers for 8-10 minutes in total, flipping in half way through.
Garnish the chicken with more parsley and serve immediately.
