Take a knife and cut into the potatoes to create a cross shape.
Bake the potatoes at the top of the oven directly on the rack, not a baking tray, for 1-2 hours at 400°F.
Take the potatoes out of the oven and cut deeper into the slices. Return the potatoes to the oven and bake for another 10 minutes.
Remove the potatoes and top with black pepper, flakey salt, and butter.
