A good quiche feels like a small victory in the kitchen. It’s a relatively easy dish to make, it can be inexpensive, and you can eat it for any meal of the day. There are also a million ways to make a quiche. You can go the classic route with pastry dough and an eggy mixture, or you can make mini, crustless, or egg-free versions.

A traditional quiche recipe uses pastry dough for the crust, but this one uses white bread. I think that’s what makes it so popular on Pinterest: It’s a little more accessible and it’s an interesting twist on a classic recipe. This recipe also makes mini quiches, and miniature things will always be popular on Pinterest (because: cute).

To make the recipe you essentially cut out circles from white bread, and then flatten then with a rolling pin and add them to a muffin tin and toast lightly. Then, you stuff the bread cups with your eggy filling and bake for 12 to 15 minutes and enjoy.
